A delightful casserole combining hashbrowns, fluffy scrambled eggs, and rich cheddar cheese, perfect for brunch or a quick weeknight dinner.

  • 1 package hashbrowns
  • 6 eggs
  • 1 cup milk
  • 2 cups cheddar cheese, shredded
  • 1 onion, diced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil or butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat olive oil or butter in a large skillet over medium heat.
  3. Add the diced onion and sauté until translucent.
  4. Combine the hashbrowns, eggs, milk, sautéed onion, cheddar cheese, salt, and pepper in a large bowl.
  5. Mix well to combine all ingredients.
  6. Transfer the mixture into a greased baking dish and spread it evenly.
  7. Bake in the preheated oven for 45-50 minutes, or until set and the top is golden brown.
  8. Let the casserole cool for a few minutes before slicing and serving.
