A beloved recipe featuring crispy chicken breast topped with marinara sauce and melting mozzarella, served with pasta.

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 egg
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Beat the egg in a shallow bowl. In another bowl, combine breadcrumbs and Parmesan cheese.
  4. Dip each chicken breast into the egg, ensuring it’s fully coated, then coat with the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat. Fry the chicken for about 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to a baking dish. Pour marinara sauce over each piece and sprinkle with mozzarella cheese.
  7. Bake for around 20 minutes, or until cheese is bubbly and chicken reaches 165°F internally.
  8. Serve hot, optionally garnished with fresh basil.

Notes

For extra crispiness, consider double-dipping the chicken in egg and breadcrumbs. Store leftovers in an airtight container for up to 3 days.
