Ingredients
Scale
4 boneless (skinless) chicken breasts (about 6 oz each)
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon Italian seasoning
½ teaspoon salt
½ teaspoon black pepper
½ cup grated Parmesan cheese
½ cup shredded provolone cheese (or mozzarella)
¼ cup panko breadcrumbs
3 tablespoons mayonnaise
1 tablespoon sour cream
1 tablespoon fresh parsley (chopped, optional for garnish)
Instructions
Prepare the chicken: Gently pound the chicken breasts to an even thickness. Rub both sides with olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper.
Sear the chicken: Heat a skillet over medium-high heat. Sear the seasoned chicken for about 4–5 minutes on each side until golden brown and cooked through. Transfer them to a baking dish.
Make the Parmesan topping: In a mixing bowl, combine mayonnaise, sour cream, Parmesan cheese, provolone cheese, and panko breadcrumbs. Stir until you achieve a thick mixture.
Finish in the oven: Preheat the broiler. Spread the cheesy mixture evenly over each piece of chicken. Broil for 2–3 minutes, or until bubbly and lightly golden.
Serve & enjoy: Garnish with fresh parsley and serve hot with sides like mashed potatoes, rice, or roasted veggies.
Notes
For a spicy kick, add cayenne pepper or red pepper flakes to the seasoning mix.
