  • 4 boneless (skinless) chicken breasts (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • ½ cup shredded provolone cheese (or mozzarella)
  • ¼ cup panko breadcrumbs
  • 3 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon fresh parsley (chopped, optional for garnish)

Instructions

  1. Prepare the chicken: Gently pound the chicken breasts to an even thickness. Rub both sides with olive oil, garlic powder, paprika, Italian seasoning, salt, and pepper.
  2. Sear the chicken: Heat a skillet over medium-high heat. Sear the seasoned chicken for about 4–5 minutes on each side until golden brown and cooked through. Transfer them to a baking dish.
  3. Make the Parmesan topping: In a mixing bowl, combine mayonnaise, sour cream, Parmesan cheese, provolone cheese, and panko breadcrumbs. Stir until you achieve a thick mixture.
  4. Finish in the oven: Preheat the broiler. Spread the cheesy mixture evenly over each piece of chicken. Broil for 2–3 minutes, or until bubbly and lightly golden.
  5. Serve & enjoy: Garnish with fresh parsley and serve hot with sides like mashed potatoes, rice, or roasted veggies.
