A deliciously creamy and comforting bake, combining cottage cheese and blueberries, perfect for breakfast or a nutritious snack.

  • 1 cup cottage cheese (full-fat or low-fat)
  • 2 large eggs
  • 2 tbsp honey or maple syrup (plus more for drizzling)
  • ½ tsp vanilla extract
  • ½ cup rolled oats or oat flour
  • ½ tsp baking powder
  • Pinch of salt
  • ½ cup fresh or frozen blueberries
  • Optional: zest of ½ lemon for brightness

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a small baking dish (about 6×6 inches or similar).
  2. In a blender or food processor, combine the cottage cheese, eggs, honey (or maple syrup), vanilla extract, oats (or oat flour), baking powder, and a pinch of salt. Blend until the mixture is smooth and creamy.
  3. Gently fold in the blueberries, adding lemon zest if desired.
  4. Pour the mixture into the prepared baking dish. Bake for 25–30 minutes, until the edges are golden and the center is set.
  5. Allow the bake to rest for 5–10 minutes before serving.

Notes

Try adding a handful of fresh berries or a sprinkle of nuts for extra crunch. Store leftovers in an airtight container for up to three days.
