1 tbsp honey or maple syrup (optional)
1 tsp vanilla extract
2 tbsp cornstarch or arrowroot powder
1/2 tsp baking powder

Instructions
Preheat the oven: Set your oven to 325°F (160°C). Line a baking sheet with parchment paper to prevent sticking.
Beat the egg whites: In a clean, dry bowl, whip the egg whites with salt and baking powder until stiff peaks form.
Blend the cottage cheese mixture: In a blender, combine the cottage cheese, egg yolks, honey or maple syrup, vanilla extract, and cornstarch. Blend until smooth.
Fold in the egg whites: Gently fold one-third of the whipped egg whites into the cottage cheese mixture, then fold in the remaining egg whites.
Add blueberries: Incorporate the fresh blueberries gently into your batter.
Drop the batter: Scoop rounds of batter onto the baking sheet, allowing space between each for expansion.
Bake: Place the baking sheet in the oven and bake for 25–30 minutes, or until golden.
