A fluffy and delicious bread made with cottage cheese and fresh blueberries, perfect for brunch or a healthy snack.

  • 1/2 cup cottage cheese (blended smooth)
  • 3 large eggs (separated)
  • 1 tbsp honey or maple syrup (optional)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch or arrowroot powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat the oven: Set your oven to 325°F (160°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Beat the egg whites: In a clean, dry bowl, whip the egg whites with salt and baking powder until stiff peaks form.
  3. Blend the cottage cheese mixture: In a blender, combine the cottage cheese, egg yolks, honey or maple syrup, vanilla extract, and cornstarch. Blend until smooth.
  4. Fold in the egg whites: Gently fold one-third of the whipped egg whites into the cottage cheese mixture, then fold in the remaining egg whites.
  5. Add blueberries: Incorporate the fresh blueberries gently into your batter.
  6. Drop the batter: Scoop rounds of batter onto the baking sheet, allowing space between each for expansion.
  7. Bake: Place the baking sheet in the oven and bake for 25–30 minutes, or until golden.
  8. Cool before serving: Allow to cool briefly before diving in!

Notes

For the best results, ensure your egg whites are at room temperature before whipping.
