Cottage Cheese Blueberry Cloud Bread

A light and fluffy cloud bread made with cottage cheese and fresh blueberries, perfect for breakfast or a snack.

Ingredients

  • 1/2 cup cottage cheese, blended smooth
  • 3 large eggs, separated
  • 1 tbsp honey or maple syrup (optional)
  • 1 tsp vanilla extract
  • 2 tbsp cornstarch or arrowroot powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup fresh blueberries

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. Whip the egg whites along with salt and baking powder until you achieve stiff peaks.
  3. Combine the cottage cheese, egg yolks, honey or maple syrup (if using), vanilla extract, and cornstarch in a blender. Blend until smooth.
  4. Fold a third of the whipped egg whites into the cottage cheese mixture, then fold in the remaining egg whites until fully incorporated.
  5. Add the blueberries by folding them in or scattering on top.
  6. Drop rounds of the batter onto the prepared baking sheet, ensuring enough space for expansion.
  7. Bake for 25–30 minutes or until tops are golden and spring back when touched. Allow to cool before serving.

Notes

For a vegan alternative, substitute honey with maple syrup and use dairy-free cottage cheese.
