  • 1 onion, diced
  • 1 bell pepper, diced
  • 6 eggs
  • 2 cups milk
  • 4 cups shredded hash browns
  • 2 cups shredded cheese
  • 1 can biscuit dough
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef with the diced onion and bell pepper until fully cooked. Drain excess fat.
  3. In a large bowl, whisk together the eggs and milk, seasoning with salt and pepper to taste.
  4. Grease a baking dish, and layer the hash browns at the bottom.
  5. Spread the cooked beef mixture evenly over the hash browns.
  6. Pour the egg mixture over the beef, ensuring all ingredients are coated.
  7. Tear the biscuit dough into bite-sized pieces and sprinkle it generously on top.
  8. Finish with a layer of shredded cheese.
  9. Bake for 45-50 minutes, or until the eggs are set and the biscuit pieces are golden brown.
  10. Allow the casserole to cool for a few minutes before slicing and serving.
