A warm and comforting breakfast casserole made with crispy bacon, creamy eggs, and cheesy goodness.

  • 1 cup shredded cheese (cheddar or your choice)
  • 6 large eggs
  • 2 cups hash browns (frozen or fresh)
  • 1 cup milk
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the bacon until crispy. Once cooked, remove it from the skillet and chop it into bite-sized pieces.
  3. In a large mixing bowl, whisk together the eggs and milk. Add salt and pepper according to your taste preferences.
  4. Prepare a baking dish by greasing it. Spread the hash browns evenly across the bottom.
  5. Evenly distribute the chopped bacon over the hash browns. Next, sprinkle your chosen cheese on top.
  6. Pour the egg mixture over the layered ingredients in the baking dish, ensuring everything is well-covered.
  7. Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top has turned golden brown.
  8. Allow the casserole to cool for a few minutes before slicing it up for serving. If you’d like, garnish with chopped green onions for that finishing touch.

Notes

For a lighter version, low-fat cheese or milk can easily be substituted. This casserole is versatile; try swapping bacon for ham or sausage and add veggies for extra nutrition.
