A comforting dish with a luscious, creamy sauce enveloping tender chicken and perfectly cooked pasta, ideal for any occasion.

  • 2 large chicken breasts or thighs, boneless & skinless, cut into strips
  • 12 oz pasta (fettuccine, penne, or spaghetti)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 5 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • Salt & black pepper to taste
  • Fresh parsley, chopped, for garnish
  • Optional: red pepper flakes, fresh spinach

Instructions

  1. Begin by boiling salted water in a large pot. Cook the pasta according to package instructions until al dente. Once done, drain the pasta and set it aside.
  2. Season the chicken strips generously with salt and black pepper. In a large skillet, heat the olive oil over medium heat. Cook the chicken strips until they turn golden brown and are cooked through, about 5-7 minutes. Remove from the skillet and transfer to a plate.
  3. In the same skillet, add butter and let it melt. Sauté the minced garlic in the melted butter until it becomes fragrant — this should only take about 30 seconds.
  4. Pour in the chicken broth and heavy cream. Stir well and allow it to simmer, letting the sauce thicken slightly for about 3-4 minutes.
  5. Gradually add the grated Parmesan cheese, stirring until it melts and you have a smooth sauce. Taste and adjust seasoning if necessary.
  6. Return the cooked chicken to the skillet, along with the pasta. Toss everything together until the pasta and chicken are well coated in the creamy sauce. If you’re using fresh spinach, add it here and stir until wilted.
  7. Garnish with freshly chopped parsley and an extra sprinkle of Parmesan before serving.

Notes

Use freshly grated Parmesan for the best results. Ensure chicken is not overcooked as it may become dry.
