A quick and satisfying creamy chicken mushroom spinach skillet that is perfect for weeknight dinners.

Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 8 oz mushrooms, sliced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the bite-sized chicken pieces. Season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes.
  3. Stir in the minced garlic and sliced mushrooms. Cook for an additional 3-4 minutes until the mushrooms are tender.
  4. Toss in the fresh spinach; stir until it wilts down, which should take about a couple of minutes.
  5. Pour in the heavy cream and add the grated Parmesan cheese. Stir until the sauce begins to thicken.
  6. Serve warm with your choice of side.

Notes

For a lighter option, consider serving with a fresh garden salad. Store leftovers in an airtight container for up to 3 days.
