A comforting and budget-friendly dish featuring golden, crispy chicken coated in marinara sauce and gooey cheese, perfect for any gathering.

  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 2 large eggs
  • 3 cloves fresh garlic, minced
  • 1 cup panko breadcrumbs
  • 2 cups marinara sauce
  • 1 cup freshly grated mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Prepare the chicken: Pat the chicken breasts dry using paper towels. Season generously with salt and pepper.
  3. Set up your breading station: In one bowl, add the flour; in another, beat eggs with minced garlic. In a third bowl, combine panko breadcrumbs with Italian seasoning.
  4. Dredge the chicken: Start with the flour, coating each breast. Next, dip it in the egg wash, and finally cover thoroughly with the panko mixture.
  5. Sear the chicken: In a large skillet, heat olive oil over medium heat until shimmering. Add the breaded chicken and cook for about 4-5 minutes on each side until golden brown.
  6. Assemble in the baking dish: Transfer the seared chicken to your prepared baking dish. Spoon marinara sauce over each piece and top with mozzarella and Parmesan cheese.
  7. Bake the chicken in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.

Notes

For an extra flavor boost, consider marinating the chicken in olive oil and Italian seasoning for about 30 minutes before breading.
