A comforting and easy-to-make loaded baked potato soup cooked in a crock pot, perfect for chilly evenings.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 1 cup shredded cheddar cheese
  • 4 slices of cooked bacon, crumbled
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In your crock pot, combine the diced potatoes, chopped onion, minced garlic, and broth.
  2. Cook on low for 6–8 hours or on high for 3–4 hours until the potatoes become tender.
  3. Once cooked, use a potato masher to slightly mash the mixture for a delightful texture.
  4. Stir in the heavy cream, shredded cheddar cheese, crumbled bacon, and sour cream until well blended.
  5. Season with salt and pepper to taste. Serve hot, garnished with freshly chopped green onions.

Notes

Feel free to swap heavy cream for milk based on dietary preferences, or use turkey bacon for a lighter touch. For deeper flavor, sauté the onions and garlic before adding them to the crock pot.
