A rich and creamy meal of seared chicken thighs in a delectable garlic sauce, perfect for busy weeknights or special occasions.

  • 8 bone-in, skin-on chicken thighs (about 2 lbs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp unsalted butter
  • 6 cloves garlic (minced)
  • 1/2 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Pat the chicken thighs dry and season them with salt, black pepper, and garlic powder.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs skin-side down for 6-8 minutes until golden brown.
  3. Flip the chicken and cook for an additional 5-6 minutes until cooked through. Remove and set aside.
  4. In the same skillet, reduce heat to low, add unsalted butter, and sauté garlic until fragrant, about 30 seconds.
  5. Pour in chicken broth, deglazing the pan, and let simmer for 3-4 minutes.
  6. Stir in heavy cream and let simmer for 2-3 minutes until slightly thickened; mix in Parmesan cheese until smooth.
  7. Return chicken to the skillet, spoon sauce over it, garnish with parsley, and serve immediately.

Notes

For a lighter version, consider using half-and-half instead of heavy cream or replace chicken thighs with chicken breasts.
