Transform your weeknight dinner with this comforting dish featuring succulent chicken thighs in a creamy garlic sauce.

Ingredients

  • 8 bone-in, skin-on chicken thighs (about 2 lbs.)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp unsalted butter
  • 6 cloves garlic (minced)
  • 1/2 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated parmesan cheese
  • 2 tbsp fresh parsley (chopped, for garnish)

Instructions

  1. Pat the chicken thighs dry and season both sides with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken thighs skin-side down for about 7-8 minutes until golden brown.
  4. Flip the chicken and cook for an additional 5-6 minutes. Remove from the skillet and set aside.
  5. Reduce heat to medium in the same skillet and melt butter.
  6. Add the minced garlic and sauté for about 1 minute, stirring until fragrant.
  7. Pour in the chicken broth, stirring and scraping any browned bits from the pan.
  8. Incorporate the heavy cream and let it simmer for a couple of minutes until slightly thickened.
  9. Stir in the Parmesan cheese until melted and smooth.
  10. Return the chicken thighs to the skillet, coating them in the creamy sauce. Simmer for another 5 minutes.
  11. Garnish with fresh parsley before serving.

Notes

For a lighter version, use half-and-half instead of heavy cream. This dish can be served with mashed potatoes or roasted vegetables.
