2 large boneless, skinless chicken breasts
1 tablespoon olive oil
2 tablespoons butter
4 garlic cloves, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and black pepper to taste
Fresh chopped parsley for garnish (optional)
Instructions
Slice the chicken breasts in half horizontally or pound them to an even thickness. Season with salt, pepper, and Italian seasoning.
Heat the olive oil in a skillet over medium heat. Add the chicken and sear until golden brown and cooked through, about 4-5 minutes per side. Remove the chicken and set aside.
In the same skillet, lower the heat and add the butter and minced garlic. Sauté until fragrant, being careful not to burn the garlic.
Pour in the heavy cream and stir to deglaze the skillet. Add Parmesan cheese and let the sauce simmer until it thickens.
Return the chicken to the skillet and simmer in the sauce for 2-3 minutes until heated through.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove.
