  • 1 lb chicken breasts or thighs, thinly sliced
  • 12 oz bowtie (farfalle) pasta
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed and drained)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 3/4 cup Parmesan cheese, grated
  • 2 tbsp olive oil or butter
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Bring a pot of salted water to a boil and cook the bowtie pasta until al dente, usually around 8-10 minutes. Drain and set aside.
  2. Season the chicken slices with salt, pepper, and Italian seasoning.
  3. In a large skillet, heat olive oil or butter over medium-high heat. Sear the chicken for 5-7 minutes, or until it’s golden brown. Remove the chicken from the skillet and set aside.
  4. Using the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  5. Pour in the chicken broth, scraping up any flavorful browned bits from the skillet.
  6. Stir in the heavy cream and bring it to a gentle simmer. Then, gradually incorporate the grated Parmesan cheese, stirring until the sauce thickens—about 3-4 minutes.
  7. Return the chicken to the skillet, add the drained pasta, and toss everything together until combined and heated through, about 2-3 minutes.
  8. Garnish with fresh basil or parsley before serving warm.

Notes

For a lighter version, consider using half-and-half instead of heavy cream or swapping the chicken for sautéed mushrooms or vegetables to make it vegetarian-friendly.
