A quick and simple recipe for chicken thighs coated in a rich, creamy sauce that’s perfect for busy weeknights.

Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • Salt and pepper, to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Generously sprinkle salt and pepper over the chicken thighs.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs, cooking them for 5–7 minutes per side until golden brown.
  4. While the chicken is searing, whisk together the heavy cream, grated Parmesan cheese, and minced garlic in a bowl until smooth.
  5. Once the chicken is nicely browned, pour the creamy mixture over the thighs in the skillet.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is fully cooked.
  7. Before serving, sprinkle with freshly chopped parsley for a pop of color.

Notes

For a lighter version, swap heavy cream for full-fat yogurt or plant-based cream.
