Creamy Spinach Pasta

A delightful blend of creamy sauce, fresh spinach, and parmesan cheese, perfect for quick weeknight dinners.

Ingredients

  • 8 oz pasta (fettuccine or spaghetti)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving about ½ cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Toss the fresh spinach into the skillet, cooking until just wilted, about 2-3 minutes.
  4. Reduce heat slightly and pour in heavy cream. Let simmer for a few minutes until it thickens.
  5. Stir in grated parmesan cheese and mix until smooth. If the sauce is too thick, add a splash of reserved pasta water.
  6. Add the cooked pasta into the creamy sauce and toss well to coat.
  7. Season with salt and pepper to taste. Serve warm and enjoy!

Notes

For a lighter version, use half-and-half instead of heavy cream. Add lemon juice for a burst of freshness.
