A comforting and nutrient-packed soup featuring sweet potatoes, ground turkey, and creamy coconut milk, perfect for chilly days.

  • 1 lb ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz) coconut milk
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat.
  2. Add the chopped onion and cook until it becomes translucent, stirring occasionally.
  3. Stir in the minced garlic and cook for just a minute until fragrant.
  4. Add the ground turkey and cook until browned, breaking it apart with a spoon.
  5. Toss in the diced sweet potatoes, cumin, paprika, salt, and pepper. Mix to combine.
  6. Pour in the broth and bring the mixture to a gentle boil.
  7. Lower the heat and let it simmer for about 15 minutes, or until the sweet potatoes are tender.
  8. Finally, stir in the coconut milk and heat through.

Notes

For a thicker soup, blend a portion with an immersion blender. Adding lime juice before serving brightens the flavors.
