Creamy Tuscan Garlic Chicken Skillet

A quick and delicious creamy garlic chicken dish featuring tender chicken, savory garlic, fresh spinach, and a rich cream sauce.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, packed in oil, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper. Sear them for 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.
  4. Pour in the heavy cream and chicken broth, scraping up any browned bits from the pan and stirring continuously for 2-3 minutes until the mixture thickens.
  5. Add the fresh spinach and grated Parmesan cheese to the skillet, stirring until melted and creamy.
  6. Return the seared chicken to the skillet, spooning the sauce over each piece. Let it simmer for another 5 minutes to meld all the flavors.
  7. Serve over your choice of pasta or rice.

Notes

For added depth, marinate the chicken in Italian herbs for a few hours before cooking. Add crushed red pepper flakes for heat.
