Delightfully crispy baked chicken breasts, seasoned and coated with panko breadcrumbs and Parmesan for a guilt-free comfort food dish.

  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs, beaten
  • Cooking spray or olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the breadcrumb mixture by combining panko breadcrumbs, Parmesan cheese, garlic powder, salt, and black pepper in a large bowl.
  3. Coat each chicken breast by dipping into the beaten eggs, letting excess drip off.
  4. Breading time! Coat the chicken thoroughly with the breadcrumb mixture, pressing gently to adhere.
  5. Arrange the coated chicken on the baking sheet and lightly spray with cooking spray or drizzle with olive oil for extra crispiness.
  6. Bake in the oven for 20-25 minutes, or until cooked through and golden brown, reaching an internal temperature of 165°F (75°C).
  7. Let the chicken rest for a few minutes before serving to retain moisture and enhance flavor.

Notes

For added flavor, consider marinating the chicken breasts prior to preparation. Double-dip for extra crunch!
