Crispy Baked Parmesan Chicken is a delightful dish that’s perfect for weeknight dinners or special occasions, featuring tender chicken with a golden, crispy coating.

  • 4 boneless, skinless chicken breasts, about 68 ounces each
  • 1 cup finely grated Parmesan cheese
  • 1 cup Panko breadcrumbs
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • 2 tablespoons olive oil
  • Optional: fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels. If they’re thick, butterfly or pound them until they’re about ½ inch thick for even cooking.
  3. Set up three shallow dishes: one with flour, the second with beaten eggs, and the third with a mixture of Panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, onion powder, salt, and black pepper.
  4. Dredge each chicken breast in flour, fully coating it.
  5. Dip it into the beaten eggs, allowing any excess to drip off.
  6. Press the chicken firmly into the breadcrumb mixture until evenly coated.
  7. Line a baking sheet with parchment paper. Arrange the breaded chicken in a single layer on the sheet.
  8. Drizzle olive oil over the chicken to aid in crisping.
  9. Bake for 20-25 minutes, flipping halfway through, until golden brown and the internal temperature reads 165°F (74°C).
  10. Allow the chicken to rest for 5-10 minutes before serving. If you’d like, garnish with fresh parsley for a pop of color.

Notes

Make sure the chicken breasts are uniform in thickness for even cooking. Allowing the chicken to rest after baking helps retain moisture.
