Delicious and crispy breakfast potatoes, perfect for any morning meal.

Ingredients

  • 800g russet potatoes
  • 12 tbsp avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika powder
  • ½ tsp smoked paprika powder
  • ½ tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp sea salt
  • ½ tsp freshly ground black pepper
  • ¼ tsp chipotle powder or cayenne (optional)
  • Flaky sea salt (for serving, optional)

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Wash and peel the potatoes, or leave the skin on for added texture.
  3. Dice them into even pieces and spread them out on a large baking sheet.
  4. Remove as much moisture as possible from the potatoes using a paper towel.
  5. Drizzle the diced potatoes with avocado oil and toss them to coat evenly.
  6. Mix all the spices in a separate bowl, then sprinkle over the potatoes.
  7. Roast the potatoes for 15 minutes, then toss and roast for an additional 10 minutes with the broiler on.
  8. Serve warm, optionally topped with flaky sea salt.

Notes

For a different flavor, you can use olive oil instead of avocado oil. Ensure the potatoes are well-dried for crispiness.
