A budget-friendly, hearty dish featuring crispy breaded chicken topped with marinara sauce and gooey fresh mozzarella.

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 tbsp whole milk
  • 1 cup seasoned Italian breadcrumbs
  • 0.5 cup finely grated Parmesan cheese
  • 0.33 cup olive oil
  • 2 cups marinara sauce
  • 8 ounces fresh mozzarella cheese (sliced into 1/4-inch thick rounds)
  • 0.25 cup fresh basil leaves (thinly sliced)

Instructions

  1. Preheat your oven to 400°F.
  2. Pat the chicken breasts completely dry using paper towels. If large, pound them between two sheets of plastic wrap to an even 1/2-inch thickness. Season both sides with salt and pepper.
  3. Set up your breading station with three shallow dishes: one for flour, one for the whisked eggs and milk, and the last for breadcrumbs mixed with grated Parmesan cheese.
  4. Dredge each chicken breast in the flour, shaking off any excess. Dip it fully into the egg mixture, allowing any extra to drip off. Then, press it firmly into the breadcrumb mixture to ensure it’s evenly coated.
  5. Heat olive oil in a large, oven-safe skillet over medium heat. Once the oil is shimmering, add the breaded chicken carefully and cook for 3-4 minutes per side, until golden brown and crispy.
  6. Remove the skillet from heat. Pour marinara sauce around the chicken, and top each piece with slices of mozzarella cheese.
  7. Carefully transfer the skillet to your preheated oven. Bake for 15-18 minutes or until the cheese is melted and bubbly, and the chicken is cooked through.
  8. Garnish with thinly sliced fresh basil before serving.

Notes

Feel free to substitute whole milk with a dairy-free milk or use gluten-free breadcrumbs. Boneless chicken thighs can be used for dark meat lovers.
