Juicy chicken breasts coated in crunchy breadcrumbs, rich marinara sauce, and gooey cheese—a perfect weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup seasoned breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp paprika (optional)
  • ½ cup vegetable oil (for frying)
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  1. Pound the chicken: Place each chicken breast between two sheets of plastic wrap and pound to an even thickness of ½ inch.
  2. Prepare the coating: Set up three shallow bowls with flour, beaten eggs, and a mix of breadcrumbs, grated Parmesan, garlic powder, Italian seasoning, and optional paprika.
  3. Coat the chicken: Dredge each chicken breast in flour, dip into eggs, and coat with the breadcrumb mixture.
  4. Fry: Heat oil in a skillet and fry the breaded chicken for 3–4 minutes on each side until golden brown. Drain on paper towels.
  5. Preheat the oven: While frying, preheat the oven to 375°F (190°C) and spread marinara sauce in a baking dish.
  6. Add the fried chicken on top of the marinara and spoon more sauce over it.
  7. Top with mozzarella and Parmesan cheese, then bake for 15–20 minutes until the cheese is melted and golden.
  8. Garnish with fresh basil and serve hot.

Notes

For a gluten-free option, substitute with almond flour or chicken thighs for dark meat. Pairs well with spaghetti or garlic bread.
