  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for frying
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season both chicken breasts with salt and pepper.
  3. Set up a breading station: place flour in one bowl, beaten eggs in another, and combine breadcrumbs with Parmesan in a third bowl.
  4. Dredge each chicken breast in flour, dip it into the egg, and then coat it thoroughly in the breadcrumb mixture.
  5. Heat olive oil in a skillet over medium heat. Fry the chicken breasts for about 4-5 minutes on each side until crisp and golden brown.
  6. Transfer the cooked chicken to a baking dish. Spread marinara sauce generously over the top and then layer on the shredded mozzarella cheese.
  7. Bake in the preheated oven for 15-20 minutes until the cheese is bubbly and golden.
  8. Garnish with fresh basil before serving immediately.

Notes

For a healthier option, consider using whole wheat breadcrumbs or baking the chicken instead of frying. Substituting almond flour or gluten-free panko makes it gluten-free.
