A comforting and delicious dish featuring crispy fried chicken breasts topped with marinara sauce and melted mozzarella cheese.

  • 4 chicken breasts, pounded thin
  • 1 cup flour
  • 2 eggs, beaten
  • 2 cups panko breadcrumbs
  • ½ cup grated Parmesan
  • 1 cup mozzarella cheese, sliced
  • 2 cups marinara sauce
  • 2 tbsp olive oil
  • Fresh basil, for garnish
  • Salt, pepper, oregano to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Dredge each chicken breast in flour, ensuring an even coating.
  3. Dip the floured chicken into the beaten eggs, allowing the excess to drip off.
  4. Coat each piece with the panko and Parmesan mixture, pressing gently to adhere.
  5. Heat olive oil in a large skillet over medium heat. Pan-fry the chicken cutlets for about 3-4 minutes on each side until golden brown.
  6. Place the fried cutlets in a baking dish. Spoon marinara sauce over the center of each piece.
  7. Top with sliced mozzarella and a sprinkle of Parmesan cheese.
  8. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh basil and serve hot.

Notes

Ensure to pound the chicken breasts evenly for even cooking and prevent drying out. Leftovers can be stored in an airtight container for 3-4 days.
