  • 1 lb Chicken Breast
  • 1 cup bread crumbs (unseasoned)
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic (chopped)
  • 1 small yellow onion (diced)
  • 2 tbsp tomato paste
  • 1 28 oz canned San Marzano tomatoes
  • 1 tsp crushed red pepper
  • 1 tsp sugar
  • 10 oz fresh Mozzarella
  • Freshly grated Parmesan
  • 1 lb spaghetti or pasta of choice
  • 2 Eggs (beaten)
  • 1 cup all-purpose flour
  • 2 quarts neutral oil (for frying)

Instructions

  1. Prepare the Chicken: Butterfly the chicken breasts and pound them to an even 1/2 inch thickness. Season both sides with kosher salt and black pepper.
  2. Make the Breadcrumb Mixture: In a bowl, mix the unseasoned breadcrumbs with dried thyme, oregano, basil, remaining salt, and pepper.
  3. Sauté the Vegetables: Heat olive oil in a skillet over medium heat. Add chopped garlic and diced onions, cooking until softened. Stir in tomato paste and canned San Marzano tomatoes. Add crushed red pepper, sugar, and any remaining seasoning. Simmer for about 15-20 minutes.
  4. Set Up a Dredging Station: Arrange three shallow dishes: one with flour, one with beaten eggs, and one with your seasoned breadcrumbs.
  5. Dredge the Chicken: Coat each seasoned chicken breast first in flour, then in egg, and finally in breadcrumbs, pressing gently to ensure they stick well.
  6. Fry the Chicken: In a deep skillet, heat neutral oil over medium-high heat and fry each breaded chicken breast until golden brown, about 3-4 minutes per side.
  7. Assemble and Broil: Place fried chicken on a baking sheet. Generously top each piece with tomato sauce and sliced mozzarella. Broil in the oven until cheese is bubbly and golden.
  8. Serve with Pasta: Cook spaghetti or pasta according to package instructions. Plate the chicken with a serving of pasta and extra sauce, finishing with freshly grated Parmesan on top.

Notes

Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crispiness.
