Delicious and crispy snacks made with cottage cheese and mozzarella, perfect for appetizers or light meals.

  • 1 cup Cottage Cheese (drain well to keep bites firm)
  • 1 cup Shredded Mozzarella Cheese (can substitute with cheddar or provolone)
  • 1 large Egg (or vegan alternative such as flax or chia egg)
  • 1/2 cup Almond Flour (can substitute with oat flour)
  • 1 teaspoon Garlic Powder (optional)
  • 1 teaspoon Salt (adjust to preference)
  • 1/2 teaspoon Pepper (or cayenne for extra kick)
  • 1 tablespoon Olive Oil (brush on tops before baking)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, shredded mozzarella, and egg. Stir until well blended.
  3. Mix in the almond flour, garlic powder (if using), salt, and pepper (or cayenne). Continue mixing until you achieve a dough-like consistency.
  4. Scoop small portions of the mixture and roll them into balls. Place them on the prepared baking sheet.
  5. Brush the tops of the bites with olive oil to ensure they turn extra crispy.
  6. Bake for 15-20 minutes, or until the bites are golden brown.
  7. Let them cool slightly before digging in!

Notes

These bites can be served with marinara sauce or ranch dressing for dipping. Store leftovers in an airtight container for up to three days.
