A delightful dish of tender chicken enveloped around savory ham and melted cheese, all coated in a crunchy panko crust.

  • 4 pieces Boneless Chicken Breasts
  • 4 slices Ham (Black Forest or Honey ham)
  • 4 slices Swiss Cheese (or Provolone or Gruyère)
  • 1 cup All-Purpose Flour (gluten-free as an alternative)
  • 2 large Eggs (or a plant-based milk mixture for a vegan option)
  • 1 cup Panko Breadcrumbs (gluten-free Panko if needed)
  • 3 tablespoons Olive Oil (or Butter)
  • 1 cup Mayonnaise (or Greek yogurt as a lighter option)
  • 2 tablespoons Dijon Mustard (or yellow mustard)
  • 1 tablespoon Honey (or maple syrup)
  • 1 tablespoon Lemon Juice (or vinegar)
  • 1 teaspoon Worcestershire Sauce (optional)
  • Salt and Pepper to taste

Instructions

  1. Preheat your frying pan over medium heat and add the olive oil.
  2. Pound each chicken breast to an even thickness for uniform cooking.
  3. Layer a slice of ham and cheese on each piece of chicken.
  4. Fold the chicken over to create a pocket, pressing the edges to seal securely.
  5. Setup your breading station: one bowl for flour, one for beaten eggs, and another for panko breadcrumbs.
  6. Dip each chicken piece in the flour, then in the eggs, followed by coating it in panko breadcrumbs.
  7. Fry the chicken in hot oil for 4-5 minutes per side until golden brown and cooked through.
  8. Transfer the cooked chicken to a paper towel-lined plate to absorb any excess oil.
  9. Prepare the sauce by mixing mayonnaise, Dijon mustard, honey, lemon juice, Worcestershire sauce, salt, and pepper in a bowl.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven for best results.
