A quick yet impressive dish features crispy chicken breasts in a silky garlic Parmesan cream sauce, perfect for weeknight dinners.

  • 4 small to medium chicken breasts (or 2 large halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese, grated
  • 1 cup spinach, chopped (optional)

Instructions

  1. Prepare the chicken: Season both sides of the chicken breasts generously with salt and pepper. Heat olive oil in a skillet over medium-high heat. Once hot, add the chicken and cook for 5-6 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
  2. Make the creamy garlic sauce: Reduce the heat to medium. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant. Gradually pour in your choice of cream while stirring continuously. Mix in Italian seasoning and grated Parmesan, stirring until creamy. If adding spinach, toss it in now and let everything simmer for 2-3 minutes.
  3. Combine and serve: Return the crispy chicken breasts to the skillet, coating them in the garlic sauce. Allow to simmer for another minute and serve.

Avoid overcrowding the skillet for extra crispiness and consider marinating the chicken for added flavor.
