A quick and easy gourmet chicken dish with a crispy Parmesan crust, perfect for family dinners or meal prep.

  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (preferably panko)
  • 2 teaspoons garlic powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • 1 teaspoon paprika
  • To taste salt and pepper
  • 2 large eggs
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 spray olive oil spray (or cooking oil for frying)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and give it a light spritz of cooking spray or oil.
  2. Combine the grated Parmesan cheese, breadcrumbs, garlic powder, Italian herbs, paprika, salt, and pepper in a shallow bowl. Mix well.
  3. Whisk together the eggs and Dijon mustard in another bowl until smooth.
  4. Dip each chicken breast into the egg mixture, ensuring it’s fully coated. Let any excess egg drip off.
  5. Move the chicken to the breadcrumb mixture and press down firmly to allow good coating. Repeat for all chicken breasts.
  6. Arrange the coated chicken on the prepared baking sheet. Lightly spray the tops with olive oil.
  7. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the crust is golden brown.
  8. Let the chicken rest for a few minutes, then garnish with fresh parsley and serve.

Notes

For extra crispiness, consider double-coating the chicken. Store leftovers in an airtight container for up to 3 days.
