A comforting one-pot meal featuring tender chicken, savory vegetables, and flaky biscuits, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup frozen mixed vegetables
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp thyme
  • 1 cup biscuit dough (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts at the bottom of the Crock Pot.
  2. Add in the frozen mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, thyme, and a sprinkle of salt and pepper. Stir well to combine.
  3. Cover the Crock Pot and cook on low for 6-8 hours.
  4. About 30 minutes before you’re ready to eat, cut the biscuit dough into manageable pieces and place them on top of the chicken mixture.
  5. Cover the pot again and let the biscuits cook until they turn golden brown.
  6. Serve piping hot and enjoy!

Notes

For a thicker gravy, consider adding cornstarch mixed with water in the last hour of cooking. Feel free to experiment with different herbs.
