Ingredients

  • 4 pieces boneless skinless chicken breasts
  • 8 oz cream cheese
  • 1 cup parmesan cheese
  • 1/2 cup sun-dried tomatoes
  • 2 cloves garlic
  • 1 teaspoon Italian seasoning
  • 1 cup chicken broth

Instructions

  1. Season the chicken breasts with salt and pepper to taste.
  2. In a mixing bowl, combine softened cream cheese, parmesan cheese, sun-dried tomatoes, minced garlic, and Italian seasoning. Stir until smooth.
  3. Place the seasoned chicken breasts in the bottom of your crockpot.
  4. Pour the creamy mixture evenly over the chicken.
  5. Add chicken broth around the edges of the crockpot.
  6. Cover and cook on low for 4-6 hours, or until the chicken is fully tender and cooked through.
  7. Serve warm, spooning the creamy sauce over each piece.

Notes

For a lighter version, substitute Greek yogurt for cream cheese. Store leftovers in an airtight container for 3-4 days.
