A warm, shareable dip that combines the flavors of a classic Reuben sandwich, featuring corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing.

Ingredients

  • 1 cup corned beef, chopped
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 1 cup Thousand Island dressing
  • Rye bread or crackers for serving

Instructions

  1. Add the chopped corned beef, drained sauerkraut, shredded Swiss cheese, and Thousand Island dressing to the crockpot.
  2. Stir until the mixture is evenly combined and the cheese is distributed.
  3. Cover the slow cooker and cook on low for 120–180 minutes, until the dip is hot throughout and the cheese has fully melted.
  4. Give the dip a final stir, then serve it warm alongside rye bread or crackers.

Notes

For a smoother dip, pulse the corned beef in a food processor briefly before adding. To keep the dip warm for a longer period, use the ‘warm’ setting on the crockpot.
