A hassle-free and flavorful shredded chicken made in a crockpot, perfect for busy weeknights and versatile in its uses.

Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 large sweet onion, chopped
  • 1 cup low-sodium chicken broth
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 cup BBQ sauce or salsa
  • Salt and pepper, to taste

Instructions

  1. Chop the sweet onion and mince the garlic cloves.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. Layer the chopped onions and minced garlic at the bottom of the crockpot.
  4. Place the seasoned chicken breasts on top of the onion and garlic mixture.
  5. Pour BBQ sauce or salsa evenly over the chicken, spreading it out for full flavor coverage.
  6. Add the chicken broth, making sure it covers the chicken.
  7. Cover the crockpot and let it cook on low for 6 to 8 hours, or on high for 3 to 4 hours, until the chicken shreds easily with a fork.
  8. Use two forks to shred the chicken directly in the crockpot, mixing it with the delicious cooking juices and veggies before serving.

Notes

For a lighter option, swap out the BBQ sauce for salsa. To add extra flavor, include diced jalapeños or experiment with other spices.
