Delightful Croissant Breakfast Sandwiches made with flaky croissants, scrambled eggs, cheese, and your choice of protein.

Ingredients

  • 4 croissants, sliced in half
  • 4 large eggs
  • 4 slices cheddar cheese
  • 4 slices cooked bacon or sausage patties
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 350°F (175°C) if you plan to bake or reheat the assembled sandwiches.
  2. In a medium bowl, whisk together the large eggs, milk, salt, and pepper until well combined.
  3. Heat the tablespoon of butter in a skillet over medium heat.
  4. Pour in the egg mixture and scramble until fully cooked.
  5. Slice the croissants in half and optionally toast them lightly.
  6. To assemble your sandwich: Place a slice of cheddar cheese on the bottom half of each croissant, add scrambled eggs, then a slice of bacon or sausage, and top with the other half of the croissant.
  7. Serve immediately, or wrap each sandwich in foil and freeze for later. Reheat in the oven at 350°F for 10-15 minutes, or microwave for 1-2 minutes.

Notes

Add fresh herbs like chives or parsley to the egg mixture for extra flavor. These sandwiches are also suitable for freezing.
