  • 1 cup Milk (Dairy or Non-Dairy)
  • 1 large Egg (or flax egg for vegan)
  • 2 tablespoons Maple Syrup
  • 1 teaspoon Cinnamon or Nutmeg (optional)
  • 2 tablespoons Chia Seeds (optional)
  • Fresh Fruits (Berries, sliced bananas, or peaches)
  • Nut Butters (Almond or peanut butter)
  • Chocolate Chips
  • Spinach
  • Cooked Chicken or Tofu
  • Ricotta Cheese

Instructions

  1. Start by blending the gluten-free oats until they reach a flour-like consistency.
  2. Add the milk, your egg (or flax egg), maple syrup, and any optional spices like cinnamon or nutmeg. Blend until the batter is smooth and homogenous.
  3. Allow the batter to sit for 5 to 10 minutes, letting it thicken slightly.
  4. Heat a non-stick skillet over medium heat, lightly greasing as needed.
  5. Pour around 1/4 cup of the batter into the skillet, swirling to coat the surface evenly.
  6. Cook for 2 to 3 minutes, until the edges begin to lift and the crepe turns golden brown. Flip it and cook for an additional 1 to 2 minutes.
  7. Transfer the cooked crepe to a plate and repeat the process for the remaining batter.
  8. Fill each crepe with your favorite toppings, fold them, and enjoy your creation!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month with parchment paper in between.
