  • 4 medium russet potatoes, diced into cubes
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 garlic cloves, minced
  • 1 small onion, finely chopped
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Begin by dicing the potatoes into cubes. Place them in a pot with salted water and parboil for about 5–6 minutes until slightly tender. Drain and pat dry to eliminate excess moisture.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the parboiled potatoes in a single layer. Allow them to cook, undisturbed, for 4–5 minutes to develop a crispy crust. Stir occasionally for another 10–12 minutes until they are golden brown and fully crispy.
  4. Toss in the chopped onions and minced garlic. Cook for 2–3 minutes until the garlic is fragrant and the onions are soft and translucent.
  5. Sprinkle on the paprika, salt, and black pepper. Add the butter, stirring everything together until the potatoes are perfectly coated in rich, melted goodness.
  6. Garnish with freshly chopped parsley and serve hot.
