Dump and Bake Chicken Parmesan

A comforting and easy weeknight dinner combining chicken, whole wheat penne, and gooey cheese all baked in a rich pasta sauce.

Ingredients

  • 12 ounces whole wheat penne pasta
  • 24 ounces pasta sauce
  • 23 cups water
  • 1 pound chicken, cut into small pieces
  • 2 cups shredded mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1 cup bread crumbs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425 degrees F.
  2. Spray a 9 x 13 baking dish with cooking spray.
  3. Combine the uncooked pasta, pasta sauce, and 2-3 cups of water in the baking dish.
  4. Add the cubed chicken and 1/2 cup mozzarella cheese to the mixture.
  5. Season with salt and pepper, then mix everything together until well combined.
  6. Cover the dish with aluminum foil and bake for 20 minutes.
  7. Uncover and bake for an additional 10 minutes, or until the chicken is fully cooked.
  8. Sprinkle the breadcrumbs, remaining mozzarella, and Parmesan over the pasta dish.
  9. Bake uncovered for another 10 minutes, or until the cheese melts and the breadcrumbs turn golden brown.

Notes

Serve with a fresh salad, garlic bread, or steamed vegetables. You can store leftovers in an airtight container for up to 4 days.
