Delightful breakfast tacos stuffed with fluffy scrambled eggs, savory sausage, and gooey cheese, perfect for busy mornings or brunch gatherings.

  • 8 small tortillas
  • 6 eggs
  • 1 cup shredded cheese
  • 1 cup cooked and crumbled breakfast sausage or bacon
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • Salt and pepper to taste
  • Sour cream for serving
  • Salsa for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat a skillet over medium heat. Add the diced onions and bell peppers, cooking them for about 3-4 minutes until softened.
  3. Whisk together the eggs with salt and pepper in a bowl. Pour the egg mixture into the skillet with the onions and peppers. Scramble until fully cooked, about 3-5 minutes.
  4. Arrange your tortillas in a baking dish. Fill each tortilla with a scoop of the scrambled egg mixture, add the cooked sausage or bacon, and top with shredded cheese.
  5. Bake in the preheated oven for about 15 minutes, or until the cheese is melted and bubbly.
  6. Serve hot, topped with a dollop of sour cream and accompanied by salsa for dipping.

Notes

Feel free to swap sausage for turkey bacon or omit it for a vegetarian version. Add jalapeños for extra heat!
