A quick and effortless chicken Parmesan recipe that’s perfect for weeknight dinners, featuring tender chicken, savory marinara, and gooey cheese.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup marinara sauce
  • 1 cup shredded whole milk mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly spray a baking dish with nonstick cooking spray.
  3. Season the chicken breasts with salt, pepper, and garlic powder, if desired.
  4. Arrange the seasoned chicken in the baking dish.
  5. In a bowl, mix the marinara sauce with Italian seasoning and spread half of it over the chicken.
  6. Layer mozzarella and Parmesan cheeses on top of the sauce.
  7. Sprinkle panko breadcrumbs over the cheese and drizzle with olive oil.
  8. Bake for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the cheese is bubbly and golden.

Notes

For added moisture, consider brining the chicken breasts for an hour before cooking. For a gluten-free option, swap out panko for gluten-free breadcrumbs.
