A comforting and flavorful dish featuring crispy panko crust, rich Parmesan, and juicy baked chicken, perfect for weeknight dinners or gatherings.

  • 4 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 cup panko bread crumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 large eggs
  • Olive oil or cooking spray

Instructions

  1. Preheat your oven to 400°F (200°C) and line or grease a baking sheet.
  2. Prepare the chicken: Slice the chicken breasts horizontally or pound them to ensure even thickness.
  3. In a bowl, whisk the eggs together until they’re well combined.
  4. In another bowl, mix the grated Parmesan, panko breadcrumbs, garlic powder, paprika, salt, and pepper.
  5. Coat the chicken: Dip each chicken piece into the egg mixture, allowing any excess to drip off, then gently press into the Parmesan mixture until coated.
  6. Place the chicken on the prepared baking sheet and lightly spray with olive oil or cooking spray.
  7. Bake for 20–25 minutes, flipping halfway through, until the chicken is golden brown, and its internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for a few minutes before serving to lock in the juices and flavor.

Use fresh Parmesan for best flavor and ensure even cooking by slicing the chicken into uniform thickness.
