Easy Baked Chicken Parmesan

A quick and delicious chicken dinner that’s crispy, cheesy, and comforting, perfect for busy weeknights.

  • 4 boneless, skinless chicken breasts
  • ½ teaspoon salt (for chicken)
  • ¼ teaspoon freshly ground black pepper (for chicken)
  • ½ cup all-purpose flour
  • ½ teaspoon salt (for flour)
  • ¼ teaspoon freshly ground black pepper (for flour)
  • 2 large eggs, whisked with 1 tablespoon water or milk
  • 1 ½ cups panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 cups marinara sauce, warmed
  • 2 cups shredded low-moisture mozzarella cheese
  • Fresh chopped parsley or basil (optional)
  • Cooking spray or a drizzle of olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil, then lightly grease it.
  2. Prepare your dredging stations: In one dish, mix together the flour, salt, and pepper. In a second dish, whisk together the eggs with either water or milk. In a third dish, combine the panko breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, and onion powder.
  3. Prep the chicken: Pat the chicken breasts dry. If needed, butterfly and pound them to an even thickness. Season both sides with salt and pepper.
  4. Dredge the chicken: Coat each chicken breast in the flour mixture, then dip into the egg wash, and finally press into the breadcrumb mixture. Arrange them on the baking sheet without overlapping.
  5. First bake: Place the baking sheet in the oven and cook for about 15-20 minutes or until the chicken is mostly cooked through and turning golden brown.
  6. Add marinara and cheese: While the chicken bakes, heat the marinara sauce in a saucepan. Once the first bake is done, remove the chicken from the oven. Spoon warm marinara sauce over each cutlet, then generously top with shredded mozzarella and a sprinkle of additional Parmesan.
  7. Finishing bake: Return the baking sheet to the oven and bake for another 8-12 minutes until the cheese melts and is bubbly. Ensure those chicken breasts reach an internal temperature of 165°F (74°C).
  8. Rest the chicken for 2-3 minutes before serving. For a fresh touch, garnish with chopped parsley or basil if desired.
