Ingredients

Scale
  • 12 Hawaiian slider rolls (split horizontally as a single sheet)
  • 1 lb ground beef (80/20 for juiciness)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 6 slices American cheese (halved to make 12)
  • 1 cup shredded iceberg lettuce
  • 1/2 cup finely diced white or yellow onion
  • 12 dill pickle slices
  • 3 tbsp unsalted butter, melted (for brushing)
  • Sesame seeds (optional, for topping)
  • For the special sauce:
  • 1/3 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • 1 tsp yellow mustard
  • 1/2 tsp white vinegar
  • 1/2 tsp paprika
  • Pinch of garlic powder
  • Pinch of onion powder

Instructions

  1. Make the sauce: Whisk together mayonnaise, ketchup, relish, mustard, vinegar, paprika, garlic powder, and onion powder in a small bowl. Chill while you cook.
  2. Preheat a large skillet or griddle over medium-high heat.
  3. Season the beef: Place the ground beef in a bowl, sprinkle with salt, pepper, onion powder, and garlic powder. Gently combine.
  4. Form patties: Divide beef into 12 equal portions. Roll and press each into a thin patty slightly larger than the buns.
  5. Cook patties: Add a touch of oil to the hot skillet. Cook patties 2–3 minutes per side until cooked through. Place a half-slice of American cheese on each patty during the last 30–45 seconds to melt.
  6. Prepare rolls: Spread a layer of the special sauce on the bottom half of the Hawaiian rolls, sprinkle with diced onion.
  7. Assemble: Layer patties (cheese side up), add pickle slices, and top with shredded lettuce. Spread more sauce on the top half of the roll sheet and place over the sliders.
  8. Bake at 350°F for 8–10 minutes until warmed through and cheese is melty.
  9. Serve: Remove from oven and slice between sliders. Serve immediately.

Notes

For a lighter sauce, swap half the mayo for Greek yogurt. If you have a large crowd, double the sauce — it keeps well in the fridge.
