A fun and filling breakfast with fluffy scrambled eggs, savory sausage, and vibrant veggies wrapped in a crispy tortilla.

  • 4 large tortillas
  • 6 large eggs
  • 1 cup cheddar cheese, shredded
  • 1 cup cooked sausage or bacon, chopped
  • 1 cup fresh veggies, diced (bell peppers, onions, etc.)
  • 1/2 cup sour cream
  • Hot sauce, to taste

Instructions

  1. Whisk the eggs in a bowl until they’re smooth and fluffy. Pour into a hot skillet and cook until set, about 3-4 minutes.
  2. Add the chopped sausage or bacon to the eggs. Sauté until everything is crispy and golden, about 5-7 minutes.
  3. Take a tortilla and layer it with scrambled eggs, crispy sausage or bacon, shredded cheese, and your choice of diced veggies. Add sour cream and a splash of hot sauce for added flavor.
  4. Fold the edges of the tortilla towards the center to create a compact wrap.
  5. Heat another skillet over medium heat. Place the crunchwrap seam-side down and cook until golden brown and crispy, about 3-4 minutes. Flip and repeat for the other side.
  6. Serve fresh with sides like fruit, hash browns, or a light salad.

Notes

For extra crispy wraps, brush the outside of the tortilla with a bit of oil before frying. Feel free to substitute with any cheese or protein you love.
