A quick and delicious breakfast option that allows for customization with your favorite fillings.

Ingredients

  • 4 large tortillas (flour)
  • 6 large eggs
  • 1 cup cheddar cheese (shredded)
  • 1 cup cooked sausage or bacon (chopped)
  • 1 cup fresh veggies (diced, such as bell peppers or onions)
  • 1/2 cup sour cream (or Greek yogurt)
  • Hot sauce (to taste)

Instructions

  1. Whisk the eggs together in a bowl until fully combined.
  2. Pour the eggs into a preheated skillet and cook gently for about 3-4 minutes, stirring occasionally until fluffy and fully set.
  3. Toss in the chopped sausage or bacon and sauté for around 5-7 minutes until crispy and browned.
  4. Grab one tortilla and layer it with scrambled eggs, sausage or bacon, cheese, veggies, and sour cream.
  5. Carefully bring the edges of the tortilla toward the center, tucking in the fillings.
  6. Heat a non-stick skillet over medium heat and place the crunchwrap seam-side down, cooking for about 3-4 minutes until golden brown.
  7. Flip the wrap and repeat on the other side until crispy.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat.
