Crispy and seasoned Yukon Gold or red potatoes roasted to golden perfection, perfect for any meal of the day.

Ingredients

  • 2 pounds of Yukon Gold or red potatoes
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of smoked paprika
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and dice them into small cubes.
  3. Combine the diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper in a large mixing bowl. Toss well to ensure all pieces are coated evenly.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25–30 minutes, flipping halfway through to achieve even browning.
  6. Once they’re golden brown and crispy, garnish with freshly chopped parsley and serve.

Notes

Feel free to swap the potatoes or add bell peppers for extra flavor and color. For storage, keep in an airtight container in the refrigerator for up to 3 days.
