A quick and delicious chicken dish that’s versatile, convenient, and perfect for weeknight dinners.

  • 4 Chicken breasts
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tbsp Herbs (thyme, rosemary, or parsley)
  • 1 cup Vegetables (peppers, onions, or broccoli)
  • 8 oz Pasta
  • 1 cup Broth or stock

Instructions

  1. Preheat your oven to 375°F or heat a skillet over medium heat.
  2. Generously season the chicken breasts with olive oil, salt, pepper, garlic powder, and paprika.
  3. For baking: place the seasoned chicken in a baking dish and bake until the internal temperature reaches 165°F, about 20-30 minutes.
  4. For stovetop cooking: sauté the chicken in a skillet until golden and cooked through, about 10-15 minutes.
  5. For a slow cooker option: add chicken, vegetables, and broth to the slow cooker, cooking on low for 6-8 hours.
  6. If you’re making pasta, boil it separately, then mix it with the baked chicken.
  7. Serve your dish topped with fresh herbs and any side dishes of your choice.

Notes

For extra tenderness, marinate the chicken breasts in olive oil and herbs for a couple of hours before cooking.
