A comforting Italian dish featuring breaded chicken breasts topped with marinara sauce and gooey cheese, perfect for weeknight dinners.

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian-style breadcrumbs
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the all-purpose flour with salt and pepper in a medium bowl.
  3. Whisk the eggs until frothy in another bowl.
  4. Fill a third bowl with breadcrumbs.
  5. Coat a chicken breast in the seasoned flour, dip it into the egg mixture, and let excess drip off.
  6. Roll it in the breadcrumbs until completely covered.
  7. Fry each breaded chicken breast for 4-5 minutes on each side until golden brown in a skillet with hot olive oil.
  8. Transfer chicken cutlets to a baking dish, pour marinara sauce over each, and sprinkle mozzarella and parmesan on top.
  9. Bake for 20-25 minutes until cheese is bubbly and golden, broiling for a crispy finish if desired.
  10. Allow the chicken to rest for a few minutes before serving.
